The goal here is to provide a simple delivery service for health conscious folks that want the best products Texas has to offer. We are starting small with Raw Milk and a few raw cheeses, we will be seeking out new products to offer as we sift through and find the best!
Hey there, my name is Mark and this is my lil business. I’ll give y’all a little info about my background and my experience and how I got here. I graduated from the Texas Culinary Academy in 2008 and went on to work at numerous restaurants throughout Austin including but not limited to Cafe Josie, Whole Foods (before Amazon), Central Market, 2nd Bar & Kitchen, Vespaio, Uchi, etc.
After a solid 10 years of that I moved to Southern Oregon to start a farm with my wife and daughter, suscessfully built a Certified Organic cannabis farm there and ran it for 7 years before wrapping that up and heading back home to Central Texas. Fully immersed myself in organic farming while in Oregon that has given me a unique insight into that aspect of the food industry.
I’m now at Lira Rossa Artisan Cheese, learning the art of cheese making and helping with multiple other tasks including the Farmer’s Markets and weekly deliveries. As well as soaking up anything I can learn about Dairy Farming at Four E Dairy, which is where we make the cheese for Lira Rossa.
…so, how did we get here, to Dairy Cartel?
Well, it seems like a hole in the Austin market that could use filling. A fair priced delivery service with no hidden fees that benefits farmers, makers and customers. I’m here to help you get the quality food you can’t find in stores at prices that make since, no nickel and dimming, just straight forward, easy to deal with service and products. Quality is number one when it comes to seeking out products for the site, that’s why its a small offering and I’m on the farms making sure these items are up to my standards and the standards they portray. I have a unique insight into how farms operate and what to look for when it comes to exceptional operating practices, which is my top priority.
